As you know, our
Community is constantly searching for new and innovative ways to fundraise
in order to ensure the running of our many varied ministries here in T&T.
One of the ways
we do this is through our catering ministry, not only here but believe it or
not, also in strange and faraway places.
In 1999, Rhonda
and Brian Potter (a LWC Member resident in the UK) came up with the idea of
using our cooking skills to entice friends of the Community in the UK to
become more aware of the needs of the poor here in T&T. We had our first
fundraising Caribbean Dinner and Church appeal in a small Parish hall in
Camberley, Surrey. Since then, we have had eight such dinners in the UK.
One year, we were even crazy enough to do two dinners in separate venues,
hundreds of miles apart – Wimbledon and St Alban’s – two weekends in a row!
Since the first
dinner in Camberley, all others have been held in a Parish hall in
Wimbledon. We do not have our large kitchen to work in or the help of our
catering staff, so the work is left to just a few of us, with the help and
hospitality of Brain and Judy Potter who open their home to us for much of
the preparation.
This year , the
dinner was held on Saturday, June 4th and it turned out to be the
largest so far and was a great success. We have a great crowd with friends
of the Community – Trinidadians and UK citizens who have TT connections, who
support us every year driving from miles away to attend. We also have the
support of Robert Cardinez and his small steelband side who provide lovely
background music.
Our menu this
year was: Stewed Chicken, Caribbean Beef Goulash, Macaroni Pie, Stewed
Pigeon Peas, Rice, Fried Plantain and Salad; and for dessert: Ice Cream and
Guava Stew with lots of local sweets – Tulum, Sugar Cake, Paw Paw and
Tamarind balls, etc………
